MATREIĆ°SLU | MENNTUN: THE REFUGEE CULINARY SCHOOL

by Lucy King

The proposal is a culinary educational facility which is run by refugees who have moved to Reykjavik, Iceland to seek asylum. The participating refugees teach Icelandic people traditional dishes from their home countries, which they all consume together afterwards. In this cultural exchange, refugees are able to learn about the Icelandic culture and the language, whilst the refugees are sharing their knowledge on food.
The majority of the ingredients used in the dishes are grown on site, either externally in allotments in the summer months, or internally in the glazed walkway which will remain warm all year round.
This also provides a crossing over the lake to help connect people walking through the city to the new master-plan area further South. As people travel through the glazed walkway, they will be fully immersed with the spices and herbs, which will also inspire people to return to visit the culinary school.
